Duck Wellington with mushroom pate and parma ham with pommes Anna and baby romanesco.
One hour preparation time, 40 minutes cooking time and 30 minutes of eating pleasure.

I love food.
Italian is my favourite but I bought several duck portions at work as we have it on offer.
Duck can be simple from duck with steamed rice and hoisin sauce to more time consuming duck Wellington. Love it.

I haven’t made duck in a while, but I would buy them whole, roast em for a few hours (with a pan underneath to collect fat) and finish it with a glaze consisting of sriracha, garlic and honey.
I save the duck fat for later cooking use, such as browning potatoes or making gravy.

It’s quite trippy to look at.
It’s a cone shape that starts with small florets which spiral down and get larger as they do.
Weird but look and taste great. In Europe they are classed as a broccoli I believe while in America they are classed as a cauliflower.

Expensive restaurants don’t appeal to me. I like the family owned small restaurants that pride themselves or their cooking.
When I see some of the meals the expensive restaurants do, they look like appetisers that cost the same as a used car.

I’ve never tried one, so I can’t say. I’d like to just to see what it’s like. But yeah I love small family restaurants. My hometown actually has (or had) the highest number of restaurants per person of any city in the U.S.

If you want to try one. Ask about (word of mouth is always the best way) and look at recent reviews.

It doesn’t have to be an absurd amount of money.
Do your homework. First find out if it’s a place you’d like to go to.
No point going just because it’s expensive.
Most places have the menu as a downloadable pdf with pictures of the food and location on their own website or review sites.

Go to a place not as swanky to practice your silver service and get comfortable.
I went out with some ex-colleagues for a retirement dinner the other weekend and I still looked up the menus and wine lists online so I can go in glance at the menu and still give the people I’m with my full attention should I need to (ie the conversation). It also saves time looking at the wine list getting to know the prices and what’s good and what’s bad. I’m typically an Italian wine drinker but I saw there wasn’t any that popped at me so I went to French wines. If I did that on the day I would of spent many more minutes looking in detail at the wines before ordering and not being as attentive as I’d like with my fellow guests.
